Banana and spinach omelette

A nutritious and green omelette that is rich in fibre and protein. Can be prepared the night before so it is easy to grab breakfast on the go the next morning. Can also be frozen.

Banana and spinach omelette

Serves 1

2 eggs

½ banana
1 tbsp oats
1 tbsp hemp seeds or linseeds
A handful freshly chopped spinach (or thawed from the freezer)
A pinch of cinnamon
A pinch of cardamom
A pinch of salt

Mix all ingredients in a blender. Fry in butter or coconut oil on a pan. You can also add some fresh blueberries to the batter before you fry the pancakes.

The batter can be prepared the night before, just let it sit in the fridge until the next morning.
