Fresh spinach salad with mint and feta

An easy, light, and tasty salad packed with antioxidants from the spinach as well as fibre and healthy fat from the avocado. The edamame beans give the dish a boost of fibre and protein.

Fresh spinach salad with mint and feta

Serves 2

1 red onion, cut into thinly sliced rings
100g fresh baby spinach
1 avocado
100g feta or salad cheese
1 cucumber cut into bite-size pieces
200g edamame beans
2 tbsp rapeseed or olive oil
2 tsp finely grated lemon zest, organic
2 tbsp finely chopped mint leaves
Salt and pepper

Toss the spinach with oil and serve it in a bowl with the cucumber, beans, red onion, avocado and cheese. Sprinkle with mint, lemon zest, salt and pepper.

The salad can be served as dinner with grilled salmon or chicken,
or with a slice of wholemeal bread.
